Here we are come up with some famous veg dishes of the Mangalore-Udupi region.

Kotte kadubu

Kotte kadubu

Kotte kadubu is a soft Idli prepared by using normal Idli batter which is covered with jackfruit leaves. It is a traditional breakfast of tulunad. Kotte kadubu is prepared by using rice, Urdu dal, and jackfruit leaves. Grind the soaked rice/ idli rava and Urdu Dal and prepare idli batter. This is filled within the kotte made up of jackfruit leaves. Kotte kadubu can be served with coconut chutney or sambar.

Halasina Hannu Gatti

Halasina Hannu Gatti or Jackfruit kadubu is famous in both tulunad and malnad regions. It is one of the traditional dishes of Mangalore and Udupi. This is prepared by using rice, coconut, jaggery, and jackfruit. Jackfruit is finely chopped and mixed with the finely ground soaked rice, coconut, and jaggery. It is an instant and tasty breakfast item which is generally steamed in banana leaves.

Basale pundi

It is a typical breakfast item of Tulunad. It is nothing but steamed rice dumplings in onion gravy. Here small rice dumplings are prepared and they are soaked in onion sambar. This may take too much time to prepare basale pundi but once it has done there is no require of other side items.

Southekayi Gati

Southekayi Gatti is a cucumber steamed dumplings. This can be prepared by using rice, coconut, and finally chopped the cucumber. This Gatti is generally steamed in banana leaf. Dumplings are served with coconut chutney or pickles with coconut oil.

It is slightly different from other dumplings. It is a very tasty snack or breakfast recipe prepared by using rice and colocasia leaves. This breakfast item is famous in Tulu Nadu. There are few varieties of colocasia leaves which are edible. This leaves may be allergic to some people. Finely grind the soaked rice, red chilly, coriander seeds. This batter is mixed with chopped colocasia leaves and steamed in banana leaf. This can be served with coconut oil or the pathrode is chopped and mix up with jaggery and serve it.

Neer Dosa

Neeru dosa is a popular breakfast item of Mangalore and Udupi. This is prepared by using white rice. Finely grind the soaked white rice and prepare the dosa from it. spread the batter on the hot pan. This dosa is very thin. It can be served with jaggery and grated coconut/sambar/banana Rasayana/coconut chutney

One more tasty breakfast item of the coastal area which is thin and crispy. This can be prepared by using rice, red chili, cumin seeds, coriander seeds, turmeric, grated coconut, and the salt. This spicy batter is spread on the hot pan. Later it is served with coconut oil.

It is an instant breakfast dish. Semolina or rava is mixed with curd, water, flour, grated coconut, asafoetida, finely chopped ginger, coriander leaves/ curry leaves, and green chili. This batter is spread on the hot pan. Crispy rava roti can be served with ghee

Masala dosa is a thin and crispy rice crepe stuffed with spicy potato mash.it is a Popular dish of Udupi. Is a breakfast item dosa is prepared by using soaked rice Urdu dal and the baji made up of potato mash onion and spices.

Gulla bajji

Gulla bajji or Mattu Gulla bajji is a tasty and spicy brinjal recipe basically from the Udupi region. This is an ideal side dish for white rice which is served just before rasam or sambar. Brinjal is finely chopped and cooked with chopped onion, tamarind, jaggery, and salt.

 

 

 

Goli baje

Goli Baje

It is also known as Mangalore bajji which is a very tasty evening tea time snack which is made up of maida. Goli baje is crispy from outside, soft and sponginess from inside. This bajji is prepared by using Maida flour, curd and few spices of our own choice. Mix these items and fermented for a few hours; make small balls from it and deep fried in oil. It can be served with coconut chutney.

Mangalore buns or banana buns is a famous breakfast and tea time snack in Mangalore Udupi region bonanza sweet and soft fluffy pooris prepared mainly from maida and banana. 4-6 hours of fermentation is required. Once can be served with samba and spicy coconut chutney.
